Spicy Indonesian Grilled Chicken (Ayam Panggang Rica from Manado)

Ingredients
  

For the Chicken:
  • 1 whole chicken approx. 3–4 lbs, split open through the breast (butterflied / "bakakak-style")
  • 2 limes or 2 tablespoons lime juice to replace jeruk nipis
  • ¼ teaspoon salt
For the Spice Paste (Bumbu Rica):
  • 4 shallots or substitute with 1 small red onion
  • 2 cloves garlic (optional)
  • 3.5 oz 100 g red chili peppers (use red Fresno, red jalapeño, or a mix; adjust to taste)
  • 1- inch piece fresh ginger jahe, peeled
  • 1 teaspoon salt
  • 3 kaffir lime leaves daun jeruk, torn (or substitute with 1 teaspoon lime zest)
  • 2 stalks lemongrass serai, white parts only, bruised
  • 2 tablespoons oil for sautéing

Instruction
 

  1. Prepare the Chicken
    Rinse the chicken under cold water. Using kitchen shears or a sharp knife, split open the breastbone without cutting all the way through the back. Flatten the chicken (this is known in Indonesia as bakakak style). Rub the chicken with lime juice and ¼ tsp salt. Let it sit for 15–30 minutes.
  2. Make the Spice Paste
    In a blender or food processor, combine shallots, garlic (optional), red chilies, ginger, and 1 teaspoon salt. Blend into a rough paste (add a splash of water if needed to help it blend). Divide the paste into two equal portions.
  3. Marinate the Chicken
    Take half of the spice paste and rub it thoroughly all over the chicken, including under the skin if possible. Let it marinate for at least 30 minutes, or refrigerate for up to 4 hours for deeper flavor.
  4. Cook the Basting Sauce
    Heat 2 tablespoons of oil in a pan over medium heat. Sauté the remaining half of the spice paste along with the torn kaffir lime leaves and bruised lemongrass stalks. Cook until fragrant and slightly caramelized (about 5–7 minutes). Remove from heat and set aside.
  5. Grill the Chicken
    Preheat a charcoal grill (for the most authentic flavor) or use a gas grill. Grill the chicken over medium heat, skin side up first. Turn occasionally, basting with the cooked spice mixture until the chicken is fully cooked through (internal temperature of 165°F / 75°C) and nicely charred in spots — about 30–40 minutes total.
  6. Serve
    Cut the grilled chicken into portions and serve hot with steamed rice and fresh vegetables or sambal.

Notes

  • Chili Peppers: Use milder red chilies like Fresno or red jalapeños for manageable heat. For a spicier dish, include Thai bird’s eye chilies or dried red chilies.
  • Kaffir Lime Leaves (Daun Jeruk): Available fresh or frozen in Asian markets. If unavailable, use lime zest for citrus aroma.
  • Lemongrass (Serai): Use the white part only. If you can’t find fresh lemongrass, try using frozen or jarred alternatives. Dried lemongrass isn’t recommended here.
  • Grill Alternative: If outdoor grilling isn’t possible, roast the marinated chicken in the oven at 400°F (200°C) for 40–50 minutes, then broil for a few minutes to brown the skin. Still baste it with the sautéed spice paste.
  • Serving Suggestion: Serve with jasmine rice, sautéed greens (like spinach or kale), or cucumber salad. It pairs well with iced tea or lemon water.
